For these I just used the crappy "WinDVD Creator" software that came with the video capture device.  It sucks, but it's easy to use, fast, and lets you easily mark key frames to segment video.

Just out of curiousity, but if it's easy to use, fast and lets you easily mark key frames, why is it crappy/sucks?

Well, because that's pretty much ALL you can do with it.

And you can't just trim video - it re-renders the stream every time you make a tiny cut or edit.  When I do video capturing usually all I need to do is trim off the excess video in the beginning and end - it's not fast to do that with this programme.

And you can't do anything fancy with overlays or titles, can't transition one segment into another (or add transition effects at all), can't author animated or complex DVD menus, etc.

It's very basic in that it lets you cut and import video, and add rudimentary (i.e. high-tech for 1990) titles.
