I also have the brown hair/red beard issue.

It's pretty much the only reason I don't rock a full-on one more often. The longer it gets, the redder it gets. Waiting with bated breath for the gray to come. Then it won't matter. As of now I have two gray strands near my right temple. Two down, nine hundred ninety-eight thousand to go!

What's the problem with a red beard?  My partner has the same angst, and I just don't understand why.

In Australia, we don't have a huge tradition of bagel-eating.  Bagels are more of a novelty for the wider community here.  In fact, the closest most non-Jewish Australians have probably come to eating a bagel would be dipping a Burns & Ricker Garlic-flavoured Bagel Chip into their French onion dip.

I was lucky enough as a youngster to try a proper boiled bagel at a kosher bakery in a suburb of Melbourne with a large Jewish population.  It was plain, with a chewy texture and a hint of sweetness.  You can imagine my disappointment when I tried to replicate the experience years later at a cafe advertising bagels on the menu, and was served a roll made from regular bread dough shaped into a ring.  This is what passes as an authentic bagel here.  You can get lucky sometimes when a sandwich bar goes to the trouble of buying in boiled bagels, but that's the exception to the rule here. 

As for adding flavourings......DON"T MUCK WITH THE BAGEL!  I even have issues with the addition of poppy seeds, but that's probably unwarranted.

I am envious of you Americans and your endless sandwich and soft drink choices.

I have two good-ass sandwiches.

1.  Bagel, not toasted, split and both sides spread thickly with cream cheese, bottom half piled with smoked salmon, then plenty of wafer thin slices of red onion, a dollop of hossradish cream, a tablespoon of capers.

2.  Thick slice of buttered multi-grain bread, lettuce, homemade mayo, cold Wiener schnitzel (This is crucial - it must be cold, or the lettuce will soften and the butter will melt.  This is not good-ass.), salt and pepper, top with second slice of buttered multi-grain.
