Hoss's (not hosss) is a chain of cheapish steak houses in Pennsylvania and thereabouts. The best thing about it is the big salad bar, with soup and bread and desserts and such. It's a thing from my childhood that I acknowledge is kinda crappy but I enjoy anyway. Any time we're traveling through PA we stop at one if possible.

Now I am eating that rice with egg thing a lot, but doing it with brown rice. Yesterday I also fried up some mushrooms in butter as a topping. Yum.

Sorry, sure:

1 tsp cumin
1 tsp oregano
2 tsp garlic powder
2 tsp onion powder
1 tsp chili powder
1 Tbsp salt
1 tsp paprika
1 tsp lemon pepper
cup brown sugar

I made my own because all of the commercial stuff I've tried lately is too damn peppery and salty. From the original source, I cut the chili powder from 1 tbsp to 1 tsp and I actually added the lemon pepper.

We all liked it, it had the cumin/paprika/chili powder aroma but a milder flavor that didn't bury the beef. I managed to let the tri-tip rest in the bag with it for about 8 hours.

Also: pull that beef off when it hits 130 on the thermometer! The young and the faint of heart can eat the thins and tips that are done medium, the adults can enjoy a nice, juicy medium-rare.

The pig was a tad disappointing. My smoking rig runs a little too hot. It was cooked through, but would have benefited from a lower temperature and another hour or two. Good smoke flavor, but it didn't have that rip-it-up-with-two-forks consistency you want.

The wings, on the other hand, may become a staple. I thawed them in the bag, dumped a bunch of spice rub right in there (Rudy's Rub from San Antonio) and flopped it around. Smoked for about 90 minutes, no turning or moving (so they can be done on one set of coals). I offered a variety of sauces, but most of our guests ate them as-is.

Those wings looked so good that I walked over to the brooder box with the chicks in it and promised all 11 of the fryers to do that to their wings.
