if you are gonna make it, don't worry about the "refrigerate rice for a day" step. I believe that it would be better with day-old rice (like asian fried rice) but it was really awesome with fresh-er rice.

Yeah, I made tons of pork, but not enough of the gallopinto. But this pork is going in everything-- fried eggs with pork, stir fry with pork, pork on a sandwich, pork with different beans.

The rice and beans are cooking as we speak. Will assemble the gallopinto tomorrow or later this evening maybe. I'm not going to throw out the bell pepper though, that's just wasteful. Poor Nicaraguans ain't throwing away any bell peppers either I'll bet.

I am disappointed that it didn't turn out crispy like the recipe promised. I think I can make that happen for next time. It was extremely delicious anyhow. At the last minute I decided to remove the bell pepper because I was worried the liquid from the peppers would cause it to not crisp up. I realized I could add it back in to the tacos I made. It was pretty dang good, but a little bit bland. I had to juice it up with hot sauce.

Will definitely make it again.

yeah, the second time I made it (used the extra beans, made new rice) it wasn't crispy. I have no idea why, I am pretty sure I did it the exact same way. But I am not great at knowing what is "medium," "medium high," etc.

Today I rode my bike to work for the first time in almost a year, after a winter of not riding my bike, and set personal records on multiple segments both ways. This is a little mysterious, because I am definitely out of shape. Over the winter my old skinny jeans started fitting again in the calf/thigh but stopped fitting in the waist/hips.

Yesterday some mysterious girls came in looking for me at work, and my coworker told them I moved to Nebraska. He said he hadn't seen me in a few days so he assumed I was "already gone." I didn't think "telephone" was a real thing until this job. I don't remember whether I posted this on here when it happened, but another coworker was told at one point that I had a master's degree in physics.

Well the gallopinto was good, but what I just did with the leftover beans was fuck*ng awesome. I didn't know what to do with them so I just rummaged around the kitchen and threw some shit together. I had some ground beef, an extra bell pepper, a bunch of green onions and a package of vermicelli. Added lots of garlic, I think that's what made it so good. They were starting to sprout so I put them all in. Salt and pepper to taste.

I'm a better cook when I don't use a recipe.

I feel like I am approaching a weird thing where me and the other least-confrontational member of my house have a fight about dungeons and dragons. There are so many reasons that I can't handle this. I do not like feeling like I am being an uptight nerd. But like, if you don't want to play, don't play. No one is forcing you to play.
